Officially, it's designed to carry 11 passengers. I believe it routinely exceeds that number in operations - I've seen several real life AARs in which 14 men were packed into one.
Mikey or one of the active duty guys on the forum can probably give you a more precise answer. Hopefully this helps in the meantime.

Shawn is spot on 14 max at a medium alt in the stan for lifts higher then 6000 ft ASL you would have to go to a CH47......Mikey

For lifts in the area of 10 to 12 thousand feet in altitude the max is right around 4 guys and the crew.
This if from concerned party statements from first hand experience.

depends on the model, a UH60 is gonna be tight . But if thats the only Buss you have you make it work. Pilots on the whole are very in touch with what thier Machine can and can not do and are very saftey concious (no parachutes for whirly bird pilots). The only mission I can see a Pilot taking a risk is one that involve rescues,otherwise they just dont do crazy they leave that to others. Yes ive seen 14 in a UH60 DAP many many times.
